The second is, only make it with foods you enjoy! If eggs are not your thing try it with some ham, chopped fresh fruit or salty bacon. We will explore a range of options in the upcoming Breakfast for a Bunch series! Avocados offer a mild taste, staying power, and lend themselves to many different flavors both savory and sweet. Start with a crunchy bread such as ciabatta, english muffins, crumpets, or a hearty healthy sliced bread. This crunch will pair well with the soft silkiness of the avocado. Spoon the avocado into a bow and just mash it with a fork until it still has lumps and texture but is spreadable. Add about ¼ teaspoon of sea salt or kosher salt per avocado half. Spread over the bread and dust lightly with your preference of black pepper, cayenne (careful!), or even a ¼ teaspoon of sugar which is popular for kids and people that have never tried avocado. Next we will top this toast with an egg. Poached or lightly dry fried are both popular options to help raise the protein. Top with a handful of baby spinach or spring mix, pinch of red pepper flakes, salt and pepper to taste, and a squeeze of lemon, lime, or live on the wild side and top with a teaspoon of Hot Cauliflower brine! Ingredients 1 – 6 inch (15 cm) piece of ciabatta or slice thick hearty bread/crumpet/english muffin ½ ripe Avocado (or swap in ¼ cup of quality guacamole) 1 Large Egg 1 small handful spinach or spring mix Salt Pepper Red pepper flakes Optional You can completely change the taste profile by adding in a sprinkling of one of these: Cayenne Chili seasoning Smoked sea salt Crab seasoning Steak seasoning Lemon or Lime zest This makes a meal that is satisfying and healthy. Avocado may be all the rage right now but long term lovers of the green fruit know it belongs in more than fast food guacamole and rightly deserves a spot at your table.
